This recipe turned up on a scrap of paper at the farm shortly after Grandma Hughes' funeral. No way to know just how good of a recipe it is, or from where it comes. The original was hand-written.
| 1 1/2 cup | egg whites |
| 1/2 tsp. | salt |
| 1 1/2 tsp. | cream of tartar |
| 1 cup | cake flour |
| 1 1/2 cup | sugar |
| 1 1/2 tsp. | vanilla extract |
Preheat oven to 375 deg F. Beat egg whites until they stand in peaks. Sift together the dry ingredients twice. Fold in egg whites and vanilla extract. [Place in an angel food cake pan.] Bake for 15 minutes; turn off the heat and leave the cake in the oven for 15 more minutes.
