Makes 4-5 dozen 2" cookies.
Grandma Alexander used to make these cookies for the grandkids whenever we came to visit. Wonderful cookies with a hint of lemon flavor!
| 1/2 cup butter or shortening 1 cup sugar 1 egg 1/2 cup lemon juice |
3 cups all-purpose flour 3 teaspoons baking powder 1/4 teaspoon salt (additional sugar for sprinkling) |
Cream the shortening and sugar together, then beat until fluffy. Add the egg, and beat thoroughly.
Sift the dry ingredients (flour, baking powder, salt) together. Stir into the creamed mixture, alternating with the lemon juice. Mix thoroughly, cover, and chill for 1 hour.
Roll a small portion of dough at a time on a lightly floured board, to about 3/8 inch thickness. Cut with a cookie cutter, place on a lightly greased cookie sheet and sprinkle with granulated sugar. Bake at 400 degrees for 10-12 minutes, until the edges are lightly brown.
Note: when these cookies are made with butter, they taste virtually identically to the Christmas-season cookies found in Basel Switzerland that are called "Milanese". This was also Grandma Alexander's first baptismal names!
