Banana Cake

This recipe turned up recently in Grandma Hughes' house. No way to know just how good of a recipe it is, or from where it comes, but I do remember her banana bread as being very good. The original, hand-written recipe refers to "Banna Cake" and mashed "banna". The instructions were incomplete, so I've had to guess some.

2 1/4 cup sifted cake flour
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 cup shortening
1 cup sugar
2 eggs
1 tsp. vanilla extract
1 cup mashed banana (about 2 or 3)
1/4 cup sour milk or butter milk
Sift together flour, baking powder, and baking soda. Cream the shortening, add the sugar, and cream further. Beat the eggs and combine them and the vanilla with the creamed shortening. [Mix in the mashed bananas.] Gradually add the dry ingredients and the milk, each a little at a time. [Bake at 350 deg F until a toothpick inserted in the middle comes out clean.]
